- Heat oil in a large pot over medium high heat.
- Add onion, celery, and carrots and cook for about 10 minutes, stirring frequently.
- Add Italian seasonings, minced garlic, and salt and pepper. Continue to stir.
- Add water or broth. Stir in beans. Turn heat to medium heat and stir in chopped kale. Stir in vinegar.
- Taste and adjust seasoning as needed. Simmer over medium heat for 5 to 10 minutes.
- Remove from heat and serve hot with crusty bread.
