White Bean and Kale Soup

Servings:
Makes 6 to 8 servings

Ingredients:

  • 2 Tbsp. olive oil
  • 1 onion, diced
  • 1 1/2 cups celery, diced
  • 1 1/2 cups carrots, diced
  • 1 Tbsp. Italian seasoning
  • 4 cloves garlic, minced
  • 2 tsp. salt
  • 2 tsp. ground black pepper
  • 5 cups broth or water
  • 3 15-oz. cans of white beans
  • 4 cups kale (or chard or spinach), stems removed and leaves chopped
  • 1 Tbsp. cider vinegar

Directions:

  1. Heat oil in a large pot over medium high heat.
  2. Add onion, celery, and carrots and cook for about 10 minutes, stirring frequently.
  3. Add Italian seasonings, minced garlic, and salt and pepper. Continue to stir.
  4. Add water or broth. Stir in beans. Turn heat to medium heat and stir in chopped kale. Stir in vinegar.
  5. Taste and adjust seasoning as needed. Simmer over medium heat for 5 to 10 minutes.
  6. Remove from heat and serve hot with crusty bread.
