Seasonal Veggie Stir-Fry

Ingredients:

  • 2 cups seasonal vegetables or 1 package frozen LEAP Stir-Fry Vegetable Blend (Do not thaw, cook from frozen.)
    • Example veggies: Cabbage, yellow squash, broccoli, red and green peppers.
  • 2 Tablespoons Vegetable Oil
  • 1 to 3 Garlic cloves, minced
  • 1/4 Cup Stir Fry-Sauce (try low sodium)
  • Salt and Pepper to taste.
  • Optional: minced fresh ginger, scallions, water chestnuts, hot peppers or chili flakes for flavor
  • Optional proteien: tofu, chicken, beef

Directions:

  1. Heat a saute pan or wok over medium high heat. Add oil.
  2. Carefully add the stir fry mix and stir and toss so everything cooks evenly. Add in the garlic.
  3. Season lightly with salt and pepper.
  4. Add in the stir-fry sauce and mix everything well.
  5. Taste and adjust seasonings to your particular taste. If sauce gets to thick, add a little water or broth to thin it out.
  6. Serve over rice or noodles.
