Boil water in large pot, add potatoes, and boil until fork tender (10-12 minutes). Drain.
Heat olive oil over low heat and add leeks. Cook, stirring occasionally, until almost translucent (5 minutes).
In a bowl, combine warm olive oil and leeks, boiled potatoes, and dill. Stir to combine and season with salt and pepper to taste. Serve warm or at room temperature.
