Potato Salad with Leeks and Dill

Servings:

Ingredients:

  • 4 cups cubed new potato
  • 1 1/2 cup sliced leeks
  • 1/4-1/3 cup chopped dill
  • 1/4 cup olive oil
  • Salt and pepper

Directions:

  1. Boil water in large pot, add potatoes, and boil until fork tender (10-12 minutes). Drain.
  2. Heat olive oil over low heat and add leeks. Cook, stirring occasionally, until almost translucent (5 minutes).
  3. In a bowl, combine warm olive oil and leeks, boiled potatoes, and dill. Stir to combine and season with salt and pepper to taste. Serve warm or at room temperature.
