Maple and Rosemary Glazed Sweet Potatoes

Makes 4 side servings

Ingredients:

  • 1 pound (about 2 medium) sweet potatoes, peeled and cut into 1-inch chunks
  • 3 Tbsp. butter
  • 1/2 tsp. fine sea salt
  • 2 Tbsp. high quality maple syrup
  • 1 Tbsp. chopped fresh rosemary

Directions:

  1. Preheat oven to 375 F.
  2. Place sweet potatoes in a baking dish in a single layer.
  3. In a small pot on the stovetop, melt together butter, salt, maple syrup, and rosemary.
  4. Pour the butter mixture over the sweet potatoes. Stir to coat and again spread in a single layer.
  5. Cover with foil and bake for 45 minutes, or until sweet potatoes are very tender.
  6. To serve, spoon the sweet potatoes onto a serving dish and pour the extra glaze from the bottom of the pan on top of them.
