- Slice watermelon into 3/4-inch thick wedges, keeping the rind on.
- Whisk together lime zest, 1/4 cup lime juice, olive oil, honey, and cayenne.
- If making yogurt sauce, whisk yogurt with remaining 2 tablespoons lime and 2 tablespoons mint in a separate bowl, Set aside both mixtures.
- Heat outdoor or stovetop grill to high. When grill is hot, brush each side of watermelon slices with lime-honey mixture and grill until you see grill marks, about 1-2 minutes, then flip and grill another minute.
- Remove watermelon from grill, sprinkle with salt and mint leaves. Repeat until all watermelon is done. If using, serve yogurt sauce on the side.
