Grilled Veggie Skewers

Ingredients:

Olive oil or Butter

Salt and Pepper

Herbs

Vegetables and Fruit

Directions:

  1. Prepare all your veggies/fruit by de-seeding, pitting, and slicing into 1-inch pieces.
  2. Toss all your veggies in olive oil or melted butter, salt and pepper, and any finely chopped herbs you'd like. (Herbs work best in packet form. I like using parsley, chives, rosemary, and/or thyme. Sometimes I also squeeze a little lemon juice on my veggies!)
  3. Individually skewer veggies onto kebab sticks or dump onto tin foil and fold into sealed packets.
  4. Throw onto grill and cook until veggies are tender and skewers are slightly charred.
