Fresh Fennel Salad

Servings:
Makes 4 side servings

Ingredients:

  • 1 head of lettuce
  • 1 bulb of fennel, thinly sliced
  • 3 oranges, peeled, sectioned, and cut into bite-sized pieces. (It's also good with grapefruit, pomegranate, or blueberries)
  • 2 cups cooked garbanzo beans (any white bean works wonderfully)
  • 2 servings cooked fish (optional) Try triggerfish or salmon.
  • Mustard vinaigrette

Directions:

  1. Combine all ingredients. Add dressing to taste. Enjoy!

Notes: Be creative. This is a general outline. The basics include lettuce, fennel, a fruit for sweetness, and a protein (beans and/or fish). Also, try goat cheese or sliced almonds.
