- Place large pot or Dutch oven over medium high heat. Add oil, then onions and garlic. Saute for a few minutes until onions and garlic soften.
- Add tomato sauce (or tomatoes), salt, and pepper. Simmer for about 15 minutes.
- Add green beans, potato pieces, and water or broth. Cover and cook 1 hour or until the potatoes and beans are tender and the sauce has thickened.
- Scoop into bowls and top with parsley (or other herbs or you choice).
