Fasolakia Yiahni (Green Beans in Tomato Sauce)

Servings:
Makes 6 to 8 servings

Ingredients:

  • 3/4 cup olive oil
  • 2 onions, chopped
  • 2 cloves garlic, chopped
  • 1 15.5 oz. can tomato sauce (can use 2 cups roughly chopped tomatoes, if you'd rather cook with fresh tomatoes)
  • 2 tsp. salt
  • 1 tsp. ground black pepper
  • 2 pounds green beans, washed, with ends trimmed.
  • 1 pound medium potatoes, washed, peeled, and cut into quarters
  • 1 cup water or broth
  • Diced parsley (optional)

Directions:

  1. Place large pot or Dutch oven over medium high heat. Add oil, then onions and garlic. Saute for a few minutes until onions and garlic soften.
  2. Add tomato sauce (or tomatoes), salt, and pepper. Simmer for about 15 minutes.
  3. Add green beans, potato pieces, and water or broth. Cover and cook 1 hour or until the potatoes and beans are tender and the sauce has thickened.
  4. Scoop into bowls and top with parsley (or other herbs or you choice).
