Delicata, Apple, Goat Cheese, and Pepitas

Servings:
Makes 4 to 6 servings

Ingredients:

  • 2 1/2 pounds delicata squash, cut lenghwise, seeded, and sliced 1/2 inch thick (Peeling is not necessary for these very thin-skinned squash.)
  • 1 medium yellow onion, peeled and finely diced
  • 1 large apple, diced
  • 1/2 tsp. smoked paprika
  • 1 Tbsp. kosher salt
  • extra virgin olive oil
  • 4 oz. goat cheese
  • 2 Tbsp. pepitas, toasted
  • 6 thin slices of pancetta or proscuitto, crisped and crumbled (optional)

Directions:

  1. Preheat oven to 400 F.
  2. Toss together squash, onion, and apples with the paprika, salt, and 2 Tbsp. olive oil.
  3. Spread in a single layer on a sheet pan and roast until golden and caramelized, 30-45 minutes. Stir one or two times during roasting to brown evenly.
  4. Set oven to broil with oven rack in center of oven.
  5. Spoon roasted vegetables into oven-ready dish and crumble goat cheese over top.
  6. Broil for 1-2 minutes until cheese is golden and bubbling.
  7. Remove from oven and sprinkle with pepitas. Drizzle with olive oil and sprinkle with pancetta, if using.
