Basic Quiche

Servings:
Makes 8 servings

Ingredients:

  • 1 9-inch pie crust
  • 5 large eggs
  • 2 cups half and half
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 4 oz/1 cup shredded cheese

Directions:

  1. Heat oven to 375 degrees. If you've made your own crust, line it with foil and fill with pie weights or dry beans. Bake until the dough is airy and light (25 min). Remove from oven and take out weights and foil. (The crust should still be warm when filling is added.
  2. Roast or Saute any veggies you'd like to put in your quiche. (I also really like using leftover grilled asparagus from the night before in my quiche.) Spread veggies evenly in pie crust.
  3. Whisk together eggs, half and half, salt, pepper, and any chopped herbs you'd like (I quite enjoy rosemary and parsley in my quiche). Stir in cheese (I might suggest cheddar or chevre!).
  4. Pour egg mixture over top of veggies in warm pie crust. Fill to 1/2 inch from top of crust.
  5. Bake until quiche is lightly browned and the center is set, 40-50 minutes. If you can wait, let the quiche cool for 1 hour before eating.
