Balsamic Roasted Beets
Servings:
Makes 4 servings
Ingredients:
3 beets, peeled and diced (about 3 cups)
1 Tbsp. olive oil
1/2 tsp. fine sea salt
1 Tbsp. balsamic vinegar
1 Tbsp. honey or pure maple syrup
Directions:
Preheat oven to 425 F. Grease a large baking sheet or dish. Set aside.
Peel and cut 3 beets into 1 inch cubes. Toss beets with 1 Tbsp. olive oil and 1/2 tsp. salt. Spread onto dish or pan in an even layer.
Bake for 15-20 minutes. Stir and bake for 10 minutes more or until beets feel soft to the touch. Remove from oven.
Mix together balsamic vinegar and honey (or syrup). Add the honey/vinegar mixture to the baking dish and stir until beets are evenly coated.
Return to oven for 10 minutes, stirring once halfway through. Roast until the balsamic/honey mixture has melted into the beets.
Remove from the oven and serve warm or store and serve later over your favorite salads.
