Garlicky Bok Choy

Servings:
Makes 4 servings

Ingredients:

  • 1 Tbsp. olive oil
  • 2 garlic cloves, minced
  • 1 shallot (or 2-3 spring onions), chopped
  • 1 pound baby bok choy, rinsed and cut into quarters with core intact
  • 1 Tbsp. soy sauce
  • Sesame seeds, optional

Directions:

  1. Heat oil in a large skillet over medium high heat. Add garlic and shallot and cook, stirring, until fragrant, about 30 seconds.
  2. Add bok choy, soy sauce, and 2 Tbsp. water and cover immediately. Cook 1 minute. Uncover and toss, then cover and cook until bok choy is tender at the core, about 3 more minutes.
  3. Sprinkle with sesame seeds, if desired. Serve hot.
